Who doesn’t like hashbrowns with their brekkie on the weekend?  Here are 3 ideas to suit every taste including classic, sausage and apple as well as a spicey variety!

 
3-4 slices bacon, diced
2 russet potatoes, peeled and diced
¼ cup green onion, finely chopped
½ cup cheddar cheese, shredded
salt and pepper

Parboil your potato for 3-4 minutes. Drain and set aside.
In a large frying pan, cook bacon until it’s crispy.
Using a slotted spoon, remove bacon from the pan and set it aside.
In the same pan, cook potatoes, stirring frequently, until they become golden; 8-10 minutes.
Add bacon back into the pan and stir in green onion.
Season generously with salt and pepper.
Finish with shredded cheddar and top with a fried egg.
Enjoy!

Sausage & Apple Hash

2 tsp oil
½lb breakfast sausage, removed from casing
½ yellow onion, finely diced
1 Granny Smith apple, diced
2 russet potatoes, peeled and diced
3 tbsp tomato ketchup
1 tbsp apple cider vinegar
1 tsp fresh thyme leaves
salt and pepper

Parboil your potato for 3-4 minutes. Drain and set aside.
In a large frying pan, sauté onion and sausage until cooked through.
Using a slotted spoon, remove sausage and onion from the pan and set it aside.
In the same pan, cook green apple and potatoes, stirring frequently, until they become golden; 8-10 minutes.
In a small bowl whisk ketchup with apple cider vinegar and thyme leaves.
Return sausage and onion to frying pan and add sauce.
Stir until mixture is well coated and cook for an additional two minutes.
Serve hot with a fried egg.

Spicy Southwestern Sweet Potato Hash

2 tsp oil
½ red onion, finely diced
½ cup red bell pepper, finely diced
1 large sweet potato, peeled and diced
1 cup canned black beans, rinsed and drained
½ tsp garlic powder
½ tsp chili powder
½ tsp cumin
1 chipotle pepper in adobo sauce, minced
fresh cilantro, finely chopped

Parboil your sweet potato for 4-5 minutes. Drain and set aside.
In a large frying pan, sauté onion and red pepper until softened.
Add sweet potato and sauté, stirring frequently, until it begins to caramelize; 8-10 minutes.
Add black beans, garlic powder, chili powder, cumin and chipotle pepper. Cook for an additional 2 minutes.
Finish with freshly chopped cilantro and serve with a fried egg.
