Cosmic Bars are another another recipe  ideal for snacks and lunches that pack a nutritious and delicious punch into every bite!

Remember: so-called healthy munchies at the grocery store are usually not, so why not have a little bit of fun and whip up a batch of  these tasty bars tonight?

 

COSMIC BARS

HIGH in FIBER, CALCIUM, OMEGA 3, MAGNESIUM, MANGANESE, VIT E

 

Makes 12 bars

 

1 cup each raw, unsalted, organic almonds & walnuts* chopped

½ cup raw, organic sunflower seeds

½ cup raisins or cranberries

3 tbsp. ground organic flax

2 tbsp. organic chia seed

1 tbsp. organic whole flax seed

1/3  cup maple syrup (you can also use honey)

¼ cup coconut oil

1 tsp ground Ceylon cinnamon

1 tsp vanilla extract

1 tsp sea salt

 

Preheat oven to 350F

In a bowl, combine ground flax, maple syrup, vanilla, cinnamon and sea salt.  Set aside.  In a large bowl, combine nuts, seeds and raisins.  Stir in liquid ingredients until combined.  Press into an 8×8 pan lined with parchment paper and bake 20 minutes or until edges are beginning to brown.  Allow to cool completely before cutting into 12 bars.

 

*If you want to make this NUT-FREE, add 1/3  cup pumpkin seeds and 2/3 cups unsweetened shredded coconut as a substitute to the nuts.
