This Roasted Asparagus with Prosciutto Bits and Poached Egg recipe may sound a bit decadent, but, it is really quite simple.

Asparagus is a wonderful vegetable that is readily available and in season now.  With the addition of the meat and egg you bring colour and flavour all together on one plate.

Cooking the meat makes all the difference as well.  Enjoy!


1 tablespoon olive oil
2 oz minced prosciutto (yes, you can use ham, bacon, or pancetta)
1 bunch asparagus, trimmed
1 tablespoon extra virgin olive oil
freshly ground black pepper
lemon, juice and zest
poached eggs
